How Champagne Is Made: The Traditional Method Explained
From a tart still wine to fine bubbles — the second fermentation, riddling and dosage that set Champagne apart, and why only this region may use the name.

Before it's Champagne, it's a thin, high-acid still wine — pressed from Chardonnay, Pinot Noir and Meunier grapes grown on the region's chalk hillsides, then fermented much like any white wine. Producers often blend several villages, grape varieties and even vintage years into a single base wine, called the cuvée, aiming for a consistent house style year after year. This blending is one of the great skills of Champagne-making: a cellar master might draw on dozens of separate lots to build one blend. It's this base wine — tart and unremarkable on its own — that gets a second life in the bottle, transformed into something with almost nothing in common with where it started.
The second fermentation — where the bubbles come from
The base wine is bottled with a small dose of yeast and sugar, then sealed and laid down. Inside the bottle, the yeast ferments that sugar a second time, producing alcohol and carbon dioxide — but with nowhere to escape, the gas dissolves into the wine instead. This is the traditional method (méthode traditionnelle, once called méthode champenoise), and it's what separates Champagne from cheaper sparkling wines made by simply injecting carbon dioxide. The bottles then rest on their sides in cool cellars for months or years while the spent yeast cells, or lees, slowly break down and add the toasted, brioche-like notes prized in good Champagne — the longer the ageing, generally, the more complex the wine becomes.
Riddling: coaxing the sediment into the neck
All that dead yeast has to come out before the bottle is sold, but first it needs collecting. In riddling, or remuage, bottles are gradually tilted and turned — traditionally by hand on wooden A-frame racks called pupitres, a slow twist a few degrees at a time over weeks — until they sit almost neck-down, with the sediment settled against the cap. Many houses now do this mechanically with gyropalettes, crates that tilt and rotate hundreds of bottles at once in a fraction of the time, though some producers still riddle top cuvées by hand as a mark of care. Either way, the goal is the same: get every trace of sediment cleanly into the neck, ready to be removed.
Disgorgement and dosage — the final touches
To remove the collected sediment, the neck of the bottle is frozen, the cap is popped, and pressure ejects a small plug of ice containing the yeast — a step called disgorgement (dégorgement). A little wine is lost in the process, so it's topped up with the liqueur d'expédition, a mix of wine and sugar whose sweetness sets the final style: Brut Nature has almost none, Brut — the most common style — has only a little, while Demi-Sec and Doux are noticeably sweet. The bottle is then corked, wired and left to rest again before release. It's a fussy, multi-step process, and a large part of why traditional-method sparkling wine costs more to make than wine finished in a simple tank.

Why only this region can be called Champagne
The name is protected by French and EU law as an Appellation d'Origine Contrôlée (AOC) — Champagne can legally only come from this defined region of north-east France, made under strict rules covering grape varieties, yields, pressing and the minimum time a bottle must age on its lees. The rules are overseen by the Comité Champagne, the body representing growers and houses, which is also why sparkling wines made the same way outside the region are labelled méthode traditionnelle rather than méthode champenoise — the process can be copied, but the name cannot. It's a rare case of a production method becoming almost as famous, and as fiercely guarded, as the place itself.
Seeing the method in the cellars
All of this is easiest to understand standing in a chalk cellar, in front of racks of ageing bottles or a gyropalette mid-turn. A good cellar tour walks you through each stage in order — the blending room, the riddling racks, sometimes a working disgorgement line — before finishing with a tasting where you can actually taste the difference dosage and ageing make between cuvées. It's the kind of process that reads as fairly technical on paper but tends to click quickly once you've seen the bottles themselves, tilted at every angle, resting in the dark.
